1big bunch of brussel sprout greensthe big leaves at the top of the stalkāor a bunch of collards, swiss chard or kale would work great!

1cupwhite wine
1medium appleany firm variety is great!

1teaspoonblack pepper
1teaspoondried thyme
1teaspoonItalian seasoning
Instructions
In a large stock pot, brown bacon over medium heat until cooked through, about 10 minutes. Remove them the pot and drain on a paper towel. Cut slices into small pieces and set aside.
Remove all but 1 1/2 tablespoons of the bacon grease from the pot. Toss the minced garlic and crushed red pepper flakes into the pot and let brown for 2 minutes.
Add the diced onion to the pot and saute for 3 minutes. Pour in 1/2 the wine and scrap the bottom of the pot to get up all the good bits! Bring the liquid to a simmer.
Cut greens into bite-sized pieces and add to the pot. Stir to coat the greens. Add in the sea salt, pepper, thyme, and Italian seasoning.
Toss the apple, crushed bacon and the rest of the wine into the pot. Let cook down for 10 minutes, then serve!
