Healthy Sweet Potato Fries with Seasoned Garlic Aioli

Ingredients
2medium sweet potatoes
2tablespoonolive oil
1teaspoonsalt
1teaspoonblack pepper
1/2teaspoongarlic powder
1/4teaspooncayenne pepperoptional
Seasoned Garlic Aioli
1/4cupmayonnaise
1teaspoonpickled jalapeno juice
1garlic cloveminced
1/2teaspoonchipotle seasoning
1/4teaspoonblack pepper
1/4teaspoonsalt
Instructions
Preheat the oven to 425ºF. Slice the potatoes into thin 1/2-inch square fries—don't worry about being perfect!
Put the fries on a baking sheet with the olive oil, salt, pepper, garlic powder and cayenne. Toss with your hands and ensure that the potatoes are in a single layer.
Bake for 15 minutes, flip and bake for another 10-15 minutes until just starting to brown. Remove from the oven, shake around and let cool a couple minutes.
In a small bowl, mix the mayonnaise, jalapeno juice, minced garlic, chipotle seasoning, black pepper and salt.
